How to prepare :
Almonds dough :
Mix almonds with castor sugar + vanilla odor then ad white egg gradually until you obtain cohesive dough then let it rest
NB : you can change color and the odor as you like

Cocoa's cookies :
750g butter
400g castor sugar
4 yellows eggs
1 spoon vanilla
1 spoon baking powder
250g corn flour
1 spoon cocoa
Flour as you need
How to prepare :
Knead the butter very well for obtain a creme ; then put the rest of amounts then the flour gradually until you obtain a soft dough . open the dough for make a thin papers then make different forms with different tomplates : squares ; Stars ;hearts ;circles ;triangles...
Then put them in an oven at 150°c for 15 to 20 minutes.
For decoration ;paste eash two cookies with apricot jam and put some jam at the edges of the cookie and paste crushed peanuts at this edges.
Now ; take 1 white egg + 1 spoon lemon jus + 1 teaspoon oil + 5 spoons flowers water ; mix all the ingredients ; ad one teaspoon of cacao then ad castor sugar gradually until you obtain a thick and heavy liquide for not corrupt the form of cookie . with a teaspoon put the creme on the cookie and decorate with a hulf of peanut.










Fruits with almonds dough :
Amounts :
Cup of crushed almonds
Cup of castor sugar
50g butter
2 whites eggs
Food colorant
Flowers water
Fillers :
Cup of crushed biscuits
Cup of crushed almonds
Honey as you need
How to prepare :
In a ball ; put almonds and sugar( take crushed almonds and castor sugar and mix all together and crushed all again for obtain better results )
Ad whites eggs and gather the dough with flowers water for obtain a soft dough easy for use .
Divide the dough and colorate each piece with a color then cover them with paper .
Make the fillers with the amounts listed ; for obtain a soft dough ; make a small balls 1,5cm of diameter
With almonds dough ;make a small balls 3cm of diameter ; put a ball of fillers dough inside a ball of almonds dough ; then make the peace as a fruit like you see in the picture ( for Peaches and pears; don’t colorate the dough but spray the color after you finish the peaces ) ; at the end decorate with papers and twigs.
Let the peaces dry and put theme in small cups of paper.

Mkhabez with nuts
Amounts :
500 g crushed nuts
300 g castor sugar
Whites eggs as you need
Pills of nuts
For cover :
2 or 3 whites eggs
Jus of one lemon
Castor sugar
2 teaspoons of cocoa powder
Water + flowers water
How to prepare :
In a ball ; mix nuts and castor sugar, wet with whites eggs until you get homogeneous dough.open the dough and make differents forms with templates : circles ;squares …………………….
Put the cookies in an oven plate painted with butter and covered with flour, and cook it for 5 to 10 minutes.
Make the cover with all the amounts listed above, and cover the cookies then put a piece of nuts under each cookie.

How to prepare:
In a ball mix flour, salt, melted margarine, mix very well with fingers.
wet with water and flowers water and gather the dough then let it rest for 15 to 20 minutes, during this period make the fillers with all amounts listed previously.
Make the dough to the thickness of 3mm.
Put the fillers as you like on the dough then rol the dough around the fillers and make wreaths , cook it for 15 to 20 minutes at middle heat , let it get cold then cover and decorate it.


Kefta
Amounts:
2 kg castor sugar
1,5 kg almonds crushed very well
Little of vanilla
The white eggs as you need
Fillers:
1,5 kg almonds crushed very well
2 inboxes of crushed biscuites
0,5 kg crushed nuts
Honey
How to prepare :
Mix the sugar, almonds and vanilla. Ad the white eggs and knead gently to obtain a cohesive dough.
For fillers ;mix the biscuits, almonds, nuts, gather them with honey.
Spray a little of flour on the table and make the dough to the thickness of 3 mm. put the fillers as you like on the dough then rol the dough around the fillers and cut Squares, triangles .....
Decorate as you like

Mkhabez
Dough:
3 cups of crushed almonds
2 cups of castor sugar
Peels of one lemon
3 or 4 eggs
1 spoon vanilla
The cover:
3 whites eggs
1 spoon of lemon jus
1 teaspoon oil
5 spoons flowers water
Castor sugar
How to prepare:
In a ball; mix almonds + castor sugar + vanilla + lemon peel, wet with eggs to obtain a homogeneous and soft dough . spray a little of flour on the table of work; and make the dough the thickness of 3 cm ; and cut to the form you like : circles; triangles and squares
Put the cookies in the oven at a middle temperature ( 150° ) for 15 minutes; wen it dry and bottoms comes pink; get out and let get cold.
How to prepare the cover:
whisk the blanks eggs ; ad lemon jus and oil ( for get shine ) + flowers water ; ad castor sugar gradualy to obtain a thik cover.
Cover one piece of cookies if the cover thik as you like ad more of castor sugar.
You can coloring the cover and decorate the face of cookies as you like.













The roses
Amounts:
Dough:
4 kg flour,
butter 1 kg,
1 kg of water + flowers water,
little of salt.
Fillers:
3 kg of almonds crushed,
1 kg castor sugar,
lemon peel,
flowers water.
How to prepare:
In a bowl, mix flour, salt and butter melt. put the water gradually to obtain a homogeneous dough ,let rest.
make the fillers with amounts mentioned above.
Make the dough to the thickness of 2 mm.
Cut 4 circles and place one over the other.









Put a small amount of fillers in the middle,









then roll up one fold and press , and Turn Helically, and then paste with blanks eggs.










After cooking; diving in the honey, then sprayed the pistachios.

Note: You can accomplish this flowers by coloring the dough or by spraying the dough with Sprayer.

How to prepare

Mix flour + butter dissolved + vanilla, wet with water + flowers water, to get a solid dough rather
Fillers:
500 g almonds, crushed very well
300 g castor sugar
1 spoon of lemon peel
1 teaspoon Vanilla
3 or 4 eggs
Honey + flowers water
The preparation of fillings:
Mix almonds, sugar, lemon peel, vanilla and with eggs wet gradually, until you get the filling cohesive. Make balls size of a walnut. Place the balls on a surface covered with fine sugar, to not stick. And covered the balls.

Ingredients:
500 g flour.
¼ cup sugar.
10 g vanilla.
Husked one lemon.
250 g melted butter.
4 egg yolk (egg whites, reserve it).
2.5 g chemical yeast.
Peeled and crushed almonds.
Apricot jam for decoration.
Preparation:
In a special container, place sugar + vanilla + butter + husked lemon +4 egg yolk, mix well by hand, and then add the chemical yeast with a little flour, then start adding the remaining flour gradually always with mixing until you obtained soft dough, easy to Pelleting. Turn on the oven. Make medium-sized spheres (eg, size of a walnut), as in the picture.
